Salad of spring leaves and radish

This simple salad works really well with grilled meats. Try experimenting with different leaves to see how much flavour you can get out of the different combinations.

Ingredients

  • soft green lettuce 1, such as butterhead
  • radish 1 bunch, tops removed and very finely sliced
  • sorrel or baby spinach a large handful
  • rocket or watercress a large handful
  • mint a small handful of leaves, roughly chopped
  • avocado 1, peeled and sliced

dressing

  • honey 1 tsp
  • mustard ½ tsp
  • lime 1 juiced

Method

  • Step 1

    Whisk the dressing ingredients together. Season the washed salad leaves and add the radish, avocado and mint. Toss with the dressing just before serving.
