Ingredients

  • lemons 7 large, unwaxed or well-scrubbed
  • golden caster sugar 500g
  • tartaric acid or citric acid 15g (buy from chemists and cook-shops)
  • soda water to serve

Method

  • Step 1

Wash the fruit then peel the rind in long strips from the lemons. Put the rind with 500ml water in a pan and simmer for 15 minutes.

  • Step 2

Squeeze the fruit and pour through a sieve into the pan. Simmer gently for another 15 minutes with the lid firmly on. Add the sugar and simmer for a further 5 minutes, still with the lid on, then remove from the heat and cool for 30 minutes before stirring in the tartaric acid. Allow to sit for at least 3 hours before decanting into sterilised bottles. Mix with soda water to serve.
