This recipe couldn't be easier but delivers a deliciously different brunch for two. You could mix it up by adding chorizo, if you don't want to go veggie.

  • spring onions 4, finely chopped
  • butter
  • eggs 4, beaten
  • roasted red peppers 3, from a jar, sliced
  • avocado 1, sliced
  • flour tortillas 4, warmed
  • rocket 2 handfuls
  • chilli sauce to serve


  • Step 1

    Cook the spring onions in a knob of butter in a non-stick frying pan until soft. Add the eggs and scramble softly. Divide the eggs, peppers and avocado between the warm tortillas. Add some rocket and roll up. Serve with chilli sauce.
