Warm bacon, avocado and spinach salad

If you're entertaining friends for dinner, this warm bacon, avocado and spinach salad makes the perfect starter. Light and easy to make, the warm bacon and dressing takes this salad to the next level.



  • baby spinach 100g
  • avocado  1, sliced
  • red onion 1, peeled and thinly sliced
  • streaky bacon 6 rashers
  • walnuts 50g
  • olive oil 2tbsp
  • cider vinegar 1tbsp
  • Dijon mustard 1tsp


  • Step 1

    Divide the baby spinach, a sliced avocado and some thinly sliced red onion between 2 plates.

    Fry the streaky bacon rashers in a non-stick frying pan till crisp and brown, then spoon all but 1 tbsp bacon fat from the pan.

    Throw in the walnuts and 2 tbsp olive oil to warm through, then quickly whisk in 1 tbsp cider vinegar and 1 tsp dijon mustard before drizzling over the salad.
