Pho is a classic Vietnamese broth, served on every street corner in Vietnam. Pho takes at least four hours to make, so we have created our own Vietnamese noodle soup for you to enjoy when you have half an hour to spare. Star anise, ginger, chilli - this soup is packed with fragrant Asian flavours.



  • flat rice noodles or vegetable stock or star anise or root ginger or fish sauce or lime or sugar or Chantenay carrots or sugarsnap peas or red chilli or mint or coriander to serve


  • Step 1

    Cook the noodles following packet instructions. Rinse in cold water and drain. Heat the stock in a small saucepan and add the star anise, ginger, fish sauce, lime juice and a large pinch of sugar. Simmer for 5 minutes then add the carrots and cook for another 5 minutes. add the sugarsnaps for 2 minutes then throw in the chilli and noodles. When heated through, pour into bowls and serve with some fresh herbs such as mint and coriander.
