Seared beef and watercress salad

This seared beed and watercress salad recipe makes the most of it's ingredients – perfect as a starter or as a light lunch. The punchy dressing brings out the best in the beef and the watercress, and it's ready in just 25 minutes.



  • watercress 80g
  • sirloin steak 2 thick ones, oiled
  • radishes 10, thinly sliced
  • crème fraîche 3 tbsp
  • red onion ½ small, thinly sliced
  • Dijon mustard 1 tbsp


  • Step 1

    heat a griddle pan (chargrill) to blisteringly hot. Season the steak with salt and a good layer of freshly ground black pepper. Sear for 2 minutes on each side then rest for 5 minutes. Divide the watercress, radish and onion between two plates. Whisk together the crème fraîche and Dijon (thin it with a little water to a drizzling consistency). Slice the beef and divide it between the salads. Drizzle the dressing over and serve.
