pea and ham soup cups with parma skewers

Glam up shop-bought soup by serving in espresso cups and adding a decorative garnish. A great little Christmas canapé or starter.



  • parma ham 4 slices
  • mint 8 sprigs
  • mini bruschetta toasts 6-12, ready made
  • pea and ham soup 600ml, ready made
  • single cream 1 tbsp
  • extra-virgin olive oil 1 tbsp


  • Step 1

    Cut the Parma ham in half lengthways. Thread each piece onto a cocktail stick, creating folds as you thread it on and add a sprig of mint at the end. Keep chilled.

  • Step 2

    Heat the soup until it is steaming hot, but not boiling. Spoon into warm espresso cups and sit these on saucers.

  • Step 3

    To decorate, put one or two pieces of bruschetta on the side of each saucer. Add a few drops of single cream and extra-virgin olive oil to the top of each soup and a twist of black pepper. Sit the Parma ham and mint cocktail sticks over the top or next to the cup and serve.
