Crumpet avocado toast melt
Heat 2 tbsp olive oil in a pan, then cook 1 tbsp ’nduja or finely chopped cooking chorizo until it melts into the oil. Stir in 1 tbsp sherry vinegar and 6 diced cherry tomatoes. Toast 2 Warburtons giant crumpets (or try our cheesy crumpets here), then add a slice of emmental to each and grill until melted. Add ½ a mashed avocado, then drizzle with ½ the ’nduja or chorizo mixture. Add a poached egg, then spoon over more of the mixture and some chopped parsley. Repeat with the other crumpet.
Moroccan avocado toast
Drain a small can of chickpeas, then put ½ in a pan with 2 tbsp olive oil, 1 crushed clove of garlic, a splash of water and cook until warmed through. Season and squish to a rough paste, then mix in the rest of the chickpeas and 2 tbsp naturalyogurt. Take 2 slices of ciabatta and brush with vegetable oil mixed with ½ tsp paprika. Bake until crisp, then spoon over the chickpeas. Top with ½ a sliced avocado, quarters of small soft-boiled eggs and more paprika.
Avocado marmite dippers
Toast 2 pieces of seeded wholemeal toast, then spread liberally with butter and marmite. Mash ½ an avocado with sea salt and divide between the slices of toast. Cut into fingers and serve with soft-boiled eggs for dipping. Do you love marmite? Try our marmite recipes here.
California avocado toast
Peel a carrot into ribbons and put in a bowl with a ¼ finely sliced red onion. Mix 1 tbsp white wine vinegar and 1 tbsp caster sugar and stir until the sugar dissolves. Add to the carrot/onion mixture and toss, then leave for 10 minutes. Mix 2 tbsp crème fraîche with ½ crushed clove of garlic, season and spread over 2 pieces of toasted sourdough. Layer over 1 thinly sliced avocado, some drained carrot and onion and a sprinkling of zaʼatar.
Spicy crab and avocado toast slice
Toast 2 thick slices of farmhouse white loaf. Mix 50g white crab meat with the juice of ½ a lime, ½ a chopped red chilli, a handful of coriander and some seasoning. Mash ½ an avocado with more lime juice and some salt. Spread on the slices of toast then top with the crab mix. If you have any leftover crab, make one of our favourite crab recipes.
