Spiced chicken with sweet potato wedges

Healthy midweek meals don't get much better than this. Another great way with chicken breast, with a quick and easy spice rub - and served with crunchy sweet potatoes, cut into chunky wedges and baked. A low-fat but full of flavour everyday dinner.

Ingredients

  • garlic powder 1 tsp
  • cayenne pepper 1 tsp
  • paprika 1 tsp
  • ground cumin 1 tsp
  • olive oil
  • skinless chicken breasts 2
  • sweet potato 1 large, washed and cut into wedges
  • green salad to serve

Method

  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Mix the garlic powder and spices with 2 tsp olive oil to make a paste and season. Flatten the chicken between sheets of clingfilm until 1cm thick then rub the paste into the chicken, leave to marinate. Toss the sweet potato wedges in 1 tbsp olive oil and season. Tip onto a baking tray and cook for 35-40 minutes until cooked and crisp on the outside. Grill the chicken for 4 minutes on both sides until cooked through. Serve with salad.
