Pork fillet with apple and onion confit

Impress friends and family with this simple, yet tasty pork fillet with apple and onion confit. Served with rocket leaves, this is a perfect meal to cook up on the weekend.



  • olive oil 3 tbsp
  • pork fillet 750g
  • red onions 3, sliced
  • Cox’s apples 2, cored and cut into wedges
  • Dijon mustard 2 tbsp
  • white wine 200ml
  • rocket leaves to serve


  • Step 1

    Heat 1tbsp of the olive oil in a pan and cook the pork fillet for 10 minutes or until browned all over. Cover and cook for a further 15 minutes, turning occasionally.

    Meanwhile, in another pan, heat the remaining olive oil, add the onions and cook until golden. Add the apples to the onions and cook for a further 5 minutes. Season the pork and serve with the apples and onions and rocket.
