Pea, radish and rare beef salad

This rare beef salad is perfect as a starter or as a light lunch. Look out for small, sweet but peppery radishes. Horseradish and Dijon mustard add to the punch in the dressing, and the peas add perfect little spikes of sweetness.



  • oil
  • sirloin steak 1 large thick one, all fat removed
  • little gem lettuce 1
  • radishes 200g, sliced
  • peas 200g fresh, blanched for a minute and refreshed
  • mint leaves a small bunch
  • crème fraîche 3 tbsp
  • Dijon mustard 1 tbsp
  • creamed horseradish ½ tbsp


  • Step 1

    Heat a griddle until smoking hot. Oil the steak on both sides and season really well. Griddle for 1 minute each side then leave to rest for 5 minutes.

  • Step 2

    Arrange little gem leaves on 2 plates. Slice the steak and toss with the radishes, peas and mint. Pile on top of the leaves. Whisk together the crème fraîche, Dijon mustard and horseradish with enough water to give a drizzling consistency. season, then drizzle over the salads.
