Griddled minute steaks with warm bean salad

This is a great way of cooking steak to give it extra flavour. The steaks are briefly griddled until medium rare and then a mustard and shallot dressing is poured over. Serve with the warm bean and cherry tomato salad.

Ingredients

  • green beans 150g, trimmed
  • rump steak 350g, fat removed
  • olive oil
  • cherry tomatoes 150g, halved
  • Dijon mustard ½ tsp
  • balsamic vinegar 1 tbsp
  • extra-virgin olive oil 2 tbsp
  • shallot 1, finely chopped

Method

  • Step 1

    Cook the beans in boiling water for 4-5 minutes.

  • Step 2

    Meanwhile, heat a griddle (chargrill) to smoking hot. Put the steak pieces between 2 sheets of clingfilm and bash out to 1cm thickness with the back of a wooden spoon. Season lightly, brush with oil then griddle for 1 minute each side and put on a plate to rest.

  • Step 3

    Whisk the dressing ingredients together. Drain the beans, mix with the cherry tomatoes and dressing and serve with the steak.
