Crisp pork and warm bean salad

Simply cooked pork belly with perfect crackling for dinner? Yes please. Serve this easy dish with a warm green bean salad - with red onion and a zesty orange dressing topped with a scattering of flaked almonds for a special meal for two.

Ingredients

  • pork belly 500g piece
  • green beans 300g
  • flaked almonds 2 tbsp, toasted
  • red onion ½ small, sliced
  • olive oil
  • red wine vinegar 1 tbsp
  • orange ½, zested and juiced

Method

  • Step 1

    Score the skin of the pork, pat dry and rub with sea salt. Roast for 45 minutes to an hour at 220C/fan 200C/gas 7 until cooked through and the crackling is crisp. Meanwhile simmer the green beans until tender. Drain and mix with the flaked almonds, onion, olive oil, red wine vinegar, a squeeze of orange juice and a pinch of orange zest. Serve the pork in slices with the warm, dressed beans.
