Chicken masala

If you love Indian food, you’ll love this tasty and easy to throw together chicken masala, made with fresh and ground coriander, chilli, ginger and garlic. It takes less time to cook than it takes to order a takeaway!



  • oil
  • onion 1 small chopped
  • cinnamon 1 stick
  • cardamom pods 2
  • cloves 4
  • fennel seeds
  • turmeric
  • ground coriander
  • chilli powder 1 tsp
  • tomato purée 1 tsp
  • root ginger 2cm piece finely chopped
  • garlic 2 cloves  crushed
  • oil for frying
  • skinless chicken breasts 2 cut into pieces
  • tomato 1 chopped
  • coriander leaves a handful chopped


  • Step 1

    Heat 3 tbsp oil in a large pan. Cook the onion for 1 minute. Turn heat down and add the spices, tomato purée, ginger and garlic and cook for another 5 minutes on low, stirring occasionally. Stir in hot water to make a sauce. Bring to boil, simmer for 20 minutes, stirring occasionally.

  • Step 2

    Add chicken and tomato to the sauce and simmer for 10 more minutes until the chicken is cooked through. Serve with a sprinkle of coriander and plain rice or naans.
