Spinach and beetroot salad

This salad is vitamin-packed with earthy beetroot and spinach and is great for counting towards your five-a-day. Serve this healthy veggie main with warm crusty bread for mopping up the lovely honey and Dijon dressing.



  • sherry or red wine vinegar 3 tbsp
  • cooked beetroot 8 small, vacuum-packed
  • salad spinach 300g
  • cherry tomatoes 250g, halved
  • Dijon mustard 1 tsp
  • extra-virgin olive oil
  • honey 1 tsp


  • Step 1

    Pour 1 tbsp sherry or red wine vinegar over the beetroot, season and let it sit for 15 minutes.

  • Step 2

    Put the spinach in a large serving bowl. add the beetroot and tomatoes. Pour the remaining vinegar, mustard, 5 tbsp olive oil, honey and some seasoning into a glass jar with a fitted lid. Shake well and pour over the salad before serving.
