Griddled courgette salad with anchovies and capers

Ingredients
- 12 baby courgettes, cut into long slices
- olive oil
- a small bunch parsley, roughly chopped
- 2 anchovies, drained (rinsed if salted) and finely chopped
- 2 tbsp capers, fried in olive oil until very crisp
- 1 lemon, halved
Method
- STEP 1
Brush the courgette with oil and cook on a griddle (char-grill) on both sides until it begins to soften and char. Lay on a platter. Mix the parsley, anchovies and capers with a little olive oil and spoon over. Squeeze over the lemon juice and season.
