Mango and seared tuna salad

This is a great twist on the traditional French nicoise salad, with cubes of mango adding a fresh sweetness. The tuna here is seared on a hot griddle pan and laid on top of the salad, which looks stunning.



  • Little Gem lettuces  2, torn into bite-sized pieces
  • salad potatoes 12, then quartered lengthways
  • eggs 4, shelled and quartered
  • green beans 100g, trimmed and blanched
  • tomatoes 4 small, cut into wedges
  • mango  1 small, peeled and cubed
  • black olives  a handful
  • tuna steaks  4, seasoned and lightly oiled
  • extra-virgin olive oil  6 tbsp  
  • Dijon mustard 1 tsp 
  • white wine vinegar 2 tbsp whisked together


  • Step 1

    Divide the lettuce, potatoes, eggs, green beans, tomatoes, mango and olives between four plates. 

  • Step 2

    Heat a griddle pan until very hot and cook the tuna steaks for 2-3 minutes on each side. Put the tuna steaks on top and drizzle over the dressing to serve.
