Iced watermelon with mint and lime syrup

There's nothing fussy about this recipe, it's put together in just 15 minutes. This makes a really refreshing dessert; save on washing up and just hand round slices with a napkin.



  • watermelon a large wedge, cut into thin slices
  • caster sugar 100g
  • mint leaves from a small bunch
  • limes 2, juiced


  • Step 1

    Put the watermelon in the freezer an hour before serving.

  • Step 2

    To make the syrup, put the sugar in a pan with 100ml water. Heat gently until the sugar has dissolved.

    Add the mint (reserve a few small leaves for decoration) and simmer for 2 minutes.

    Leave to cool then mix in the lime juice and strain. Serve the watermelon drizzled with the syrup and sprinkled with mint leaves.
