Breakfast nachos

These epic nachos are a mash-up of a great British brekkie and a Tex-Mex snack. Make as big as you like - just add a fried egg per person!




  • corn tortillas 1 bag
  • cheddar 100g, grated
  • mozzarella 100g, grated
  • black beans 1 400g tin, rinsed and drained
  • vine tomatoes 3, diced
  • red onion 1 small, diced
  • sliced pickled jalapeños 3-4 tbsp, chopped
  • parsley a handful of leaves, chopped
  • diced bacon or lardons 100g
  • diced chorizo bits 100g
olive oil
  • lime 1, juiced
  • eggs 6, fried to serve
  • coriander a handful of leaves to serve
  • hot sauce to serve


  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Tip the tortilla chips out onto a baking tray. Sprinkle over the cheeses then bake for about 10 minutes until melted.

  • Step 2

    Mix the black beans, tomatoes, red onion, jalapeños, parsley and season. Add the lime juice and mix again.

  • Step 3

    Fry the bacon and chorizo until golden and crispy.

  • Step 4

    To assemble the nachos, spoon over the salsa then top with the chorizo, bacon and fried eggs. Finish with some fresh coriander and hot sauce. Dig in!
