Doddington Cheese Co., based in Northumberland, produces seven artisan cheeses from cows grazed on pastures in the Glendale Valley. Our favourite is Admiral Collingwood, a close-textured cheese washed in Newcastle Brown Ale. Beware: it’s pungent. £22.50/kg
