Stir-fried winter greens with garlic and chilli

Mix and match whatever winter greens you have for this side dish; try kale, spinach, brussels sprouts or a nice shredded dark cabbage. Garlic and chilli reallly pep up this great vegetarian recipe.

Ingredients

  • kale or spring greens 400g, roughly chopped into 1 inch pieces
  • vegetable oil
  • garlic 2 cloves, thickly sliced
  • red chillies 2, sliced into rings

Method

  • Step 1

    Bring a large pan of water to the boil with a little salt. Blanch the greens for 1 minute, drain and rinse in very cold water. squeeze the excess water out.

    Heat 3 tbsp oil in a wok. Fry the garlic and chilli until the garlic is golden and spoon onto kitchen paper. When ready to serve, heat the greens through in the wok and toss with the chillies and garlic.
