Ingredients

  • 1kg baby new potatoes, halved if large
  • 3 tbsp mayonnaise
  • 6 tbsp soured cream
  • 2 shallots, finely chopped
  • 6 tbsp gherkins or cornichons, chopped
  • 3 tbsp baby capers
  • 2 tsp Dijon mustard

Method

  • STEP 1

    Boil the potatoes in salted water until tender. Mix the rest of the ingredients and season well.

  • STEP 2

    Drain the potatoes and cool then toss with the dressing.
