potato, gherkin and caper salad

Ingredients
- 1kg baby new potatoes, halved if large
- 3 tbsp mayonnaise
- 6 tbsp soured cream
- 2 shallots, finely chopped
- 6 tbsp gherkins or cornichons, chopped
- 3 tbsp baby capers
- 2 tsp Dijon mustard
Method
- STEP 1
Boil the potatoes in salted water until tender. Mix the rest of the ingredients and season well.
- STEP 2
Drain the potatoes and cool then toss with the dressing.
