One-pot pasta with goat’s cheese and spinach

This pasta combines wilted spinach and soft goat's cheese to create a creamy and rich dish. Garnish with some extra parmesan and enjoy!

You don’t need to boil the pasta in a separate pan for this dish – cooking everything together makes it extra creamy.

Ingredients

  • elicoidali or penne 200g
  • spring onions 4, chopped
  • garlic 1 clove, crushed
  • soft goat's cheese 150g
  • parmesan or vegetarian alternative 50g, finely grated, plus extra to serve
  • vegetable stock 700ml
  • spinach 100g, chopped

Method

  • Step 1

    Starting with the pasta, put all the ingredients except the spinach and stock in a large pan. Pour over the veg stock and season well. Bring to a simmer and cook for 12-15 minutes, stirring now and again, until the pasta is just cooked. Stir in the spinach until it wilts and serve with extra parmesan.
