Halloumi salad with houmous dressing and pitta crisps

This salad packs a punch with halloumi, tomatoes, cucumber and red onion with a hummus and yogurt dressing. Serve with crispy wholemeal pitta triangles.

Ingredients

  • wholemeal pitta bread 2
  • tomatoes 2, cut into chunks
  • red onion ½, sliced
  • cucumber ½, cut into chunks
  • olive oil
  • lemon ½, juiced
  • halloumi 250g, cut into chunks
  • dried oregano
  • houmous 2 tbsp
  • natural yoghurt 75ml

Method

  • Step 1

    Heat the oven to 180c/fan 160c/gas 4. To make the pitta crisps, separate the pittas into 2 halves, cut into triangles and bake for 5-10 minutes until crisp.

    Toss the tomatoes, onion, and cucumber with 1 tbsp olive oil and the lemon juice.

  • Step 2

    Sprinkle the halloumi with a little oregano then grill or fry until golden. Mix the houmous and yoghurt with a little water to make a dressing and season.

    Toss the halloumi with the salad, drizzle over the houmous dressing and serve with the pitta crisps.
