Ingredients

  • 3 tbsp white wine vinegar
  • 6 tbsp extra-virgin olive oil
  • 2 tbsp soft herbs such as parsley or chives, chopped
  • 3-4 heads chicory, separated

Method

  • STEP 1

    Whisk the vinegar with some seasoning. Gradually whisk in the olive oil and herbs. Arrange the chicory on a large plate and drizzle over the dressing.
