Make our simple vegan soup with sweet potato, carrot, and fiery ginger. This warming soup recipe is ideal for a quick and easy wintery lunch, plus it's low in calories, too

Ingredients

  • olive oil 1 tbsp
  • onion 1 large, diced
  • sweet potato 500g, peeled and cut into chunks
  • carrots 300g, chopped
  • ginger 8cm piece, finely grated
  • vegetable stock 1.5 litres

Method

  • Step 1

    Heat the oil in a large pan and cook the onion, potato and carrots for 10 minutes. Add the ginger and cook for 2 minutes before adding the stock. Bring to the boil and simmer for 20 minutes until the potato and carrots are completely tender.

  • Step 2

    Remove from the heat and blend until smooth using a stick blender. Add a little more stock or water if it’s too thick. Taste and season, if it needs it, before serving.
