Ingredients

  • 600g Jersey Royals, washed
  • a large bunch wild garlic, finely chopped
  • extra-virgin rapeseed oil
  • smoked Cornish salt

Method

  • STEP 1

    Boil the potatoes until they’re tender, about 8-10 minutes. Drain them well then mix the potatoes with the wild garlic, a drizzle of rapeseed oil, and a pinch of smoked salt. Toss to wilt the wild garlic, then tip into a bowl to serve.
