This is a great way to spruce up your sprouts. The orange and ginger adds a nice fiery sweetness and blanching them for just 3-4 minutes means they have just the right amount of bite

Ingredients

  • brussel sprouts 1.2kg, trimmed and halved
  • ginger grated to make 2 tbsp
  • oranges 2, zested and juiced
  • butter 100g
  • 
soy sauce 2 tbsp

Method

  • Step 1

    Bring a large pan of water to a simmer and add a big pinch of salt. Add the sprouts and blanch for 3-4 minutes until they’re bright green and tender, but still have bite. Drain well. Mash the ginger, orange zest, and butter with plenty of seasoning. Tip into a frying pan and let it melt for a minute.

  • Step 2

    Add the sprouts and toss to coat in the butter. Fry for 5-10 minutes until the edges are starting to turn golden brown. Add the orange juice and soy and simmer until the sauce coats the sprouts.
