Ingredients

  • 2 slices ciabatta, cut into cubes
  • olive oil
  • 100g serrano ham
  • 1 red pear, cored and cut into wedges
  • 50g rocket
  • 1 tsp Dijon mustard
  • 2 tbsp cider vinegar
  • 1 tsp honey
  • 1 shallot, finely chopped

Method

  • STEP 1

    Toss the ciabatta with 1 tbsp olive oil, spread onto a baking tray and grill until golden, about 5 minutes, turning regularly.

  • STEP 2

    To make the dressing, whisk all the ingredients with 2 tbsp olive oil and season.

  • STEP 3

    Arrange the ham, pear wedges and rocket onto 2 plates. Add the warm croutons and spoon over the dressing.
