Rarebit cauli steaks

Ingredients

  • cauliflower 1 large 
  • butter 25g
  • vegetable oil
  • mature cheddar 100g, grated
  • wholegrain or dijon mustard 1 tsp
  • egg yolk 1 small
  • Worcestershire sauce a couple of good dashes (optional)
  • dark ale or beer 1-2 tbsp
  • spring onions 4, chopped including green bits

Method

  • Step 1

    Heat the oven to 200C/fan 180C/gas 6. Cut the cauliflower in half then cut a thick slice from each half to make 2 steaks. Melt the butter in a large frying pan and add 1 tbsp of oil. Season the cauliflower steaks then fry on each side until golden.

  • Step 2

    Lift the steaks onto a baking tray and roast in the oven for 10 minutes or until tender when pierced with a knife. Once cooked, remove the steaks and turn the oven to medium grill.

  • Step 3

    Put the cheese, mustard, egg yolk and Worcestershire sauce in a bowl and mash together, adding enough ale to make a paste. Stir in the spring onions and season.

  • Step 4

    Spoon the cheese mix over the cauli steaks and put under the grill for 4-5 minutes or until golden and bubbling.
