Lentil and okra curry

Okra has got a bit of a bad reputation, but this delicious, quick and easy veggie curry proves just how delicious it can be. Plus, it will be on the table in just 30 minutes.

Ingredients

  • onion 1, chopped
  • ginger 1cm piece, grated
  • red lentils 250g
  • oil
  • okra 200g, trimmed
  • cumin seeds 1 tsp
  • dried chilli 1, sliced
  • garlic 2 cloves, chopped
  • coriander a handful, chopped
  • Total 0% Greek yoghurt

Method

  • Step 1

    Put the onion, ginger and lentils in a saucepan with enough water just to cover and bring to a simmer. Cook for 20 minutes or until tender, adding more water if you need to.

  • Step 2

    Heat a little oil in a frying pan, add the okra and fry for a couple of minutes then add the cumin, chilli and garlic and stir well until the okra is tender. Serve the lentils in deep bowls with the okra spooned on top and coriander sprinkled on. Add a dollop of yoghurt if you like.
