Gammon with egg and pineapple chilli salsa

Gammon steaks are really easy to prepare and are served with fried eggs, fresh watercress salad and a homemade pineapple chilli salsa. Ideal for a quick and easy midweek meal

Ingredients

  • oil for frying
  • gammon steaks 2
  • eggs 2
  • watercress 2 handfuls to serve

SALSA

  • pineapple 150g, diced
  • red chilli 1, finely chopped
  • red onion 1/2 small, finely diced
  • parsley a handful, chopped
  • lime 1, juiced

Method

  • Step 1

    Mix the salsa ingredients and season. Heat a griddle to high. Oil the gammon
    then season with pepper and grill for a few minutes on each side until cooked through. Fry the eggs in a small frying pan.

  • Step 2

    Serve the gammon with the eggs, pineapple salsa and some watercress.
