Ingredients

  • 50g butter
  • 50g plain flour
  • 400ml milk
  • 50g parmesan, grated
  • 90g stilton, crumbled
  • 4 egg whites, whisked to stiff peaks

Method

  • STEP 1

    Heat the oven to 200c/fan 180c/gas 6. Melt the butter with the flour, cook for a minute, then whisk in the milk. Simmer and whisk to a thick paste, then fold in the cheeses and egg whites.

  • STEP 2

    Pour the mixture into 4 buttered ramekins. Cook for 12 minutes or until risen.
