Steak with za’atar butter

Adding this homemade za'atar butter to your steak makes this recipe feel like a real treat, but it only takes 20 minutes and is under 500 calories - perfect for a midweek pick-me-up.

Ingredients

  • red onion ½
  • golden caster sugar 1 tsp
  • red wine vinegar 1 tsp
  • butter 50g, at room temperature
  • za’atar 2 tsp
  • lemon zest ½ tsp
  • oil
  • sirloin steaks 2
  • watercress 2 handfuls, dressed

Method

  • Step 1

    Toss the onion with the sugar and vinegar and leave to marinate. Mash the butter, za’atar and zest with some seasoning then chill.

  • Step 2

    Oil the steaks and season well. Heat a griddle until very hot then chargrill for 2 minutes on each side. Rest for 3-4 minutes, then serve with a spoonful of butter and some watercress tossed in a dressing.
