Merguez baguettes

Ingredients
- 8 merguez sausages
- 1 red onion, finely sliced
- oil
- 1 tbsp balsamic vinegar
- 2 tbsp mayonnaise
- ½ lemon, zested and juiced
- 1 baguette, cut into 4 pieces and split open down one side
- a handful coriander leaves
Method
- STEP 1
Fry or grill the merguez sausages. Meanwhile, fry the red onion in a little oil until it softens, then add the balsamic, stir and cook until the onions turn sticky.
- STEP 2
Mix the mayo with the lemon zest and juice, and season well. Spread the mayo onto the baguette pieces, divide the onions between them and add 2 sausages and some coriander leaves to each.
