Lemon and pepper steak with warm potato salad

An easy peppery steak recipe served with a hearty, warm green bean, tomato and potato salad. This makes a great quick after-work supper for two, on the table in less than 20 minutes.

Ingredients

  • lemon 1, juiced
  • olive oil
  • lean sirloin steaks 2
  • small salad potatoes 250g
  • green beans 100g
  • cherry tomatoes 250g
  • flat-leaf parsley a small bunch, chopped

Method

  • Step 1

    Mix the lemon juice with 3 tbsp olive oil and a pinch of salt. Take 1 tbsp of this mix and rub over the steaks then give each a good grinding of black pepper.

    Boil the potatoes until tender (about 12 minutes) adding the beans for the last 2-3 minutes. drain and toss with the tomatoes, parsley and remaining lemon juice mixture.

    Chargrill the steaks for 2½ minutes each side for medium-rare and serve with the potato salad.
