Feather steaks with chimichurri and sweet potato fries

Ingredients
- 1 large sweet potato, peeled and cut into thin fries
- olive oil
- 2 feather steaks
- ½ a small bunch flat-leaf parsley, finely chopped
- a small handful oregano leaves, chopped
- 1 red chilli, small finely chopped
- ½ clove garlic, chopped
- 1 tsp smoked paprika
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
Method
- STEP 1
Heat the oven to 190C/fan 170C/gas 5. Toss the fries with olive oil and season. Spread out on a tray and cook until golden and crisp, about 20-25 minutes.
- STEP 2
Mix together the chimichurri ingredients and season.
- STEP 3
Heat a griddle or heavy frying pan to high. Oil and season the steak then cook for 2 minutes on each side. Leave to rest for 5 minutes. Serve the steak with the fries and chimichurri.
