Cumin lamb fillet with cauliflower crush

Chefs are starting to become more imaginative with cauliflower, and this quick and easy spiced lamb dish with crushed cauliflower is a great way to cook it at home. It makes a fantastic alternative to mashed potato.

Ingredients

  • ground cumin 1 tsp
  • garlic 1 clove, crushed
  • chilli powder or flakes a pinch
  • lamb fillet 1 piece, trimmed of fat
  • cauliflower 1, cut into florets
  • butter

Method

  • Step 1

    Mix the cumin, garlic and chilli and rub all over the lamb.

  • Step 2

    Cook the cauliflower in simmering water until it is tender and drain very well. Crush roughly with a knob of butter and season well.

  • Step 3

    Meanwhile heat a little oil in a frying pan and cook the lamb on all sides until it is browned and feels firm to the touch. Leave for a couple of minutes then slice and serve on the cauliflower with any juices poured over.
