Ingredients

  • cooked chicken breasts 2 skinless, cut into chunks
  • avocado 1, peeled, stoned and cut into chunks
  • baby plum tomatoes 16, halved
  • cucumber 1/2, cut into chunks
  • radishes 12, quartered
  • romaine lettuce 1, chopped
  • red onion 1/2, diced

Dressing

  • garlic 1/2 clove, crushed
  • Dijon mustard 1 tsp
  • white wine vinegar 2 tbsp
  • caster sugar 1/2 tsp
  • olive oil 4 tbsp

Method

  • Step 1

    Put the garlic, mustard, vinegar and sugar in a bowl and whisk together, then gradually whisk in the olive oil and 1 tbsp of water. Season well.

  • Step 2

    Put the remaining ingredients in a large bowl or on a platter, then drizzle over the dressing and gently toss.
