Ingredients

  • olive oil
  • ½ lemon, juiced
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 25g (look for the Good4u range at Tesco and Sainsbury’s) lentil, pea and bean shoots
  • ¼ red onion, thinly sliced
  • 2 tomatoes, seeded and diced
  • ½ cucumber, diced
  • 50g rocket
  • 1 tbsp pumpkin seeds, toasted

Method

  • STEP 1

    Whisk 1 tsp oil, lemon, vinegar and mustard together and season. Pour into a small jam jar or container. Toss the lentil, pea and bean shoots, onion, tomato and cucumber with the rocket and scatter with pumpkin seeds. Dress the salad just before eating.
