Herbed cheese tartines with cucumber salad

This French-style open sandwich makes the best light lunch or quick snack. Make a healthier version of grilled cheese using quark, the low-fat soft cheese. Serve on sourdough toast with cucumber salad over the top.

Ingredients

  • quark 150g
  • garlic 1 clove, crushed
  • chives chopped to make 2 tbsp
  • basil shredded to make 2 tbsp
  • parmesan grated to make 1 tbsp
  • cucumber ½, peeled
  • cider vinegar
  • olive oil
  • white wine vinegar 1 tsp
  • sourdough 4 thick slices

Method

  • Step 1

    Mix the quark with the garlic, herbs and parmesan and leave it to sit for 10 minutes. Meanwhile, halve the cucumber, scrape out the seeds and slice into half moons. Put it in a bowl and dress with some oil and vinegar and season well. Toast the sourdough. Pile the herbed cheese on top and spoon the cucumber over.
