Chicory, apple and date salad

Chicory and apple make a fresh, crisp crunchy salad. This one has added caramel richness from medjool dates and a zingy lemon dressing. Serve as a simple, healthy lunch or as a side dish to Middle-Eastern food.

Ingredients

  • chicory 3 heads, leaves separated
  • medjool dates 3
  • watercress 100g, large stalks removed
  • apple 1, cored and thinly sliced
  • mint leaves a handful
  • flat-leaf parsley a handful

dressing

  • lemon 1, juiced
  • olive oil 5 tbsp
  • white wine vinegar 2 tbsp

Method

  • Step 1

    whisk together all of the dressing ingredients. just before serving, toss the salad ingredients with the dressing.
