Bacon, Brussels sprouts and chilli broth

Ingredients
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 100g smoked bacon lardons
- olive oil
- 2 parsnips, finely diced
- 2 thyme sprigs
- a pinch chilli flakes
- 1 litre chicken stock
- 250g brussels sprouts, finely sliced
- chilli oil (optional), to serve
Method
- STEP 1
Put the onions, garlic and lardons in a large pan, drizzle with a little oil and cook for 5 minutes. Add the parsnips, thyme, chilli flakes and stock, bring to the boil, then simmer for 15 minutes. Add the sprouts then simmer for another 5 minutes before serving with a drizzle of chilli oil if you like.
