Ingredients

  • 6 lime, juiced
  • 2–5 serrano chillies or green chillies, finely chopped
  • 1 clove garlic, crushed
  • 1 tbsp palm or demerara sugar
  • 1 tbsp fish sauce
  • 250g skinless sea bass fillet, finely diced
  • small handful coriander, chopped
  • tortilla chips

Method

  • STEP 1

    Mix the lime juice with the chillies, garlic, palm sugar and fish sauce. Season. divide the sea bass between 6 small glasses. Chill until you are ready to eat then top with the lime and chilli mix, add some fresh coriander and serve with tortilla chips.
