Prawn, avocado and rocket orzo

This prawn, avocado and rocket orzo is low calorie, dairy-free and ready in just 20 minutes - perfect for a midweek meal

Ingredients

  • fish or veg stock 300ml
  • orzo 150g
  • spray olive oil
  • garlic 1 clove, crushed
  • red chilli ½, chopped
  • raw peeled prawns 200g
  • lemon ½, zested and juiced
  • avocado ½, stoned and cubed
  • rocket a handful

Method

  • Step 1

    Heat the stock in a pan until simmering. Tip in the orzo and cook for 6-8 minutes until just tender. Drain and leave to cool in the sieve while you cook the prawns.

  • Step 2

    Heat a spray of oil in a frying pan. Add the garlic and chilli and fry for a minute until fragrant. Add the prawns and lemon zest and cook for 2 minutes until the prawns are pink. Add the lemon juice, with a good grinding of black pepper.

  • Step 3

    Toss the warm orzo with the cooked prawns, and fold through the avocado. Divide between plates, then top with the rocket leaves.
