Hot smoked salmon salad

This simple hot smoked salmon salad with a fresh and zesty mint dressing is perfect for lunch or a lighter dinner, and is ready in just 20 minutes. This is great all year round, but particularly in the summer.

Ingredients

  • baby new potatoes 300g
  • hot smoked salmon 150g, flaked
  • red onion ½ small, sliced
  • watercress 2 handfuls
  • low-fat natural yoghurt 150ml
  • lemon ½, juiced
  • mint a small bunch, chopped

Method

  • Step 1

    Steam or boil the new potatoes until just tender, about 15 minutes. Toss with the salmon and onion while still hot. Divide the watercress between 2 plates and pile the salmon and potato on top. Mix together the yoghurt, lemon juice and mint and season. Drizzle over the salad to serve.
