Scandi meatball bake with cucumber salad

This Scandi meatball bake is perfect for sharing with family and friends. Drizzle with soured cream and serve with a homemade cucumber salad and some crusty bread

Ingredients

  • pork mince 400g
  • egg yolk 1
  • allspice 1/2 tsp
  • breadcrumbs 100g
  • onion 1 small, grated
  • dill a handful, finely chopped, plus extra to serve
  • white pepper 1 tsp
  • soured cream 4 tbsp, seasoned
  • crusty bread to serve

CUCUMBER SALAD

  • white wine vinegar 2 tbsp
  • caster sugar 1 tbsp
  • cucumber 1/2, peeled and cut into half-moons
  • yellow mustard seeds 1 tsp
  • parsley a handful, chopped

Method

  • Step 1

    To make the cucumber salad, heat the vinegar and sugar in a small pan until the sugar dissolves. Cool, then put the cucumber in a bowl and pour over the liquid, add the mustard seeds and toss. Leave to sit while you make the meatballs. Stir in the parsley just before serving.

  • Step 2

    Heat the oven to 200C/fan 180C/gas 6. Mix the first 7 ingredients together and season. Roll into 20 meatballs.

  • Step 3

    Put the meatballs in a dish and into the oven. Bake for 20 minutes or until golden and cooked through. Drizzle with the soured cream and scatter with dill. Serve with the salad and bread.
