Ingredients

  • 600g beef shin, cut into pieces
  • 1 bunch spring onions, sliced
  • 3 cloves garlic, sliced
  • a thumb-sized piece root ginger, grated
  • 2 red chillies, sliced plus extra to serve
  • 2 tsp Chinese five-spice
  • 1 star anise
  • 2 tbsp brown sugar
  • 4 tbsp rice wine or dry sherry
  • 2 tbsp soy sauce
  • a 400g mix shredded greens, green beans and tenderstem broccoli
  • sesame oil
  • 2 tsp sesame seeds, toasted
  • steamed to serve basmati rice

Method

  • STEP 1

    Heat the oven to 160C/fan 140C/gas 3. Put all the ingredients except the greens, oil, seeds and rice in an ovenproof pot with a lid. Add 200ml water, stir well, then cover.

  • STEP 2

    Cook in the oven for 2 hours or until the meat is really tender. If you want a thicker sauce, scoop out the meat and boil hard for 5 minutes. Steam the greens, beans and broccoli until tender, and toss with a little sesame oil. Serve the beef with basmati rice and greens, and scatter over the toasted sesame seeds and a bit more chilli for colour if you like.
