Clementine, ginger and bay gin

Infuse your own gin with festive flavours, wrap it up nice and give it to a special someone this Christmas. It's a unique and thoughtful gift that's really easy to make

It’s worth spending money on good-quality base gin; most brands are on special offer at Christmas. Choose one without too many botanicals, like Gordon’s.

Ingredients

  • gin 750ml bottle
  • clementines 3
  • caster sugar 3 tbsp
  • ginger 50g, sliced and bashed
  • bay leaves 3

Method

  • Step 1

    Pour the gin into a large bowl, or jar.

  • Step 2

    Peel 3 strips of zest from the clementines, then peel them and remove all the white pith from the segments.

  • Step 3

    Add the segments and the zest strips to the gin along with the sugar, ginger and bay leaves.

  • Step 4

    Leave to infuse for 3 days, then decant into smaller bottles, or 1 big bottle. Serve with tonic and a couple of the orange segments in each glass.
