Bulgar wheat salad with sultanas and pistachios

Bulgar wheat is a cracked, partly cooked wheat grain so it's very quick to prepare. This Middle-Eastern inspired side also has sultanas, pistachios and spinach - perfect for serving with roast lamb.

Ingredients

  • bulgar wheat 200g
  • sultanas 75g
  • carrots 3, grated
  • spinach 150g, roughly chopped
  • pistachios 100g, toasted and roughly chopped
  • lemon 1, zested
  • red wine vinegar 4 tbsp
  • extra-virgin olive oil

Method

  • Step 1

    Pour boiling water over the bulgar wheat and sultanas, cover with clingfilm and let sit for 10 minutes until soft. Drain, rinse with cold water and tip into a large bowl.

    Add the carrots, spinach, pistachios and lemon zest and season well. Mix with the vinegar, 6 tbsp olive oil then pour over the salad and toss everything together.
